Lemon poppy seed muffins


Since I was little I saw people baking . I remember those happy days, when my mother and grandma used to make birthday cakes together. I could feel such unity while watching them baking and such a big joy eating those cakes, they were always incredibly tasty, with a thick layer of coconut shavings . Of course it's sad they ain't baking together anymore, however I'm baking now. There's no better feeling than the one you get when pull ready pastry out of the oven, give it to your friends, or relatives and see how much they enjoy it. It just makes me smile. Even though a muffin, cookie or a piece of pie is not a big thing, it can make forget your problems even for a few minutes .



For 12 lemon muffins you need :
*170ml oil
*150ml milk
*1 big egg
*1 egg-white
*1 lemon juice and its grated skin
*225g flour
*1 teaspoon baking powder
*210g sugar powder
*1/2 teaspoon salt
*2 tablespoons poppy seeds + some for decoration



◘ Preheat the oven to 190°C
◘ Mix flour, baking powder, sugar powder , salt and poppy seeds in one bowl.
◘ And oil, milk,egg, egg-white, lemon juice and its grated skin in another.
◘ Then mix dry products with the wet ones.
◘ Split dough into 12 muffin forms.
◘ Bake it in the oven for about 30 minutes (though it usually depends on what kind of stove you're using, so just keep an eye on muffins and see when they're ready).
◘ After you turn off the oven, poor some sugar and poppy seeds on each muffin and put them back in the oven and let them cool a bit.
◘ ENJOY! :)



P.S. Those pics and the description may not be perfect, but I tried really hard. Baking means a lot to me as well as photography. I'll get better. I promise. After all, it was just my first food blog. :)

21 years after the Hillsborough tragedy. :'(


Justice for the 96.
96 angels that died with no reason. 96 brothers and sisters, who are gone forever,but will never be forgotten.
96 beautiful lives were taken on that day. And our hearts burst in pain every day, and especially on the 15th of April.
No, I wasn't born when the tragedy happened. But since Liverpool FC became a part of my life, I can feel the pain, I do feel the pain. And I want justice for the 96 beautiful souls of Liverpool supporters, who came to a football match from which they have never came back. At times like these, every-one ,who has a part of his heart taken by Liverpool unites. And that feeling of unity is just overwhelming. We all feel the same, we all cry for those who are gone. We all crave for justice which has never been done. That's why it's so special to be a supporter of Liverpool FC - to be a part of this huge family, where every member is important. Liverpool FC is more than just a football club. It's a family. And no matter where're you from, you can feel like a part of it. And I know that those 96, who lost their lives at Hillsborough are happy seeing how much they mean to all of us. Justice for them and their families is all I ask. They do deserve that, they really do.
Today was such an emotional day. I've been crying a lot. And when I was watching Hillsborough Memorial Service on LFC.tv , I just couldn't get myself together. All the things that were said was really beautiful. And as I mentioned before, the unity of Liverpool supporters was just flying in the air. There even were Everton fans. And that just shows how horrible this tragedy is.. :(
Rest In Peace, you beautiful 96 angels, we'll forever remember you. And we're not going to stop fighting for justice until it's done.

Thursday

OMG! It was such an awesome day. Firstly, I bought my ticket to Mika's concert in August. And that's an absolute dream come true!! I loveeee Mika and been dreaming of his concert for years and now he's coming to my city! argh! couldn't be happier!
Secondly, my cousins came from London to Lithuania with their baby boys. And gosh I love those two little fellas. The last time I saw them was in December, can't wait for Saturday when we go to see them! Ethan & Tamuda, I love you!
And finally, the thing that perfectly ended my day was Liverpool's victory against Benfica. Kuyt, Lucas and Fernando (x2) scored! Oooh! I really adore Liverpool!
So, it's time to go to bed. It's already after midnight and I've got school in the morning.

A little bit of everything.



It's been really really long since the last time I blogged. I wanted, but didn't have time, or was a bit too lazy. However, decided that I have to write something here today.
It's the last day of my Spring holiday, but Summer starts in 2 months. And I'm extremely excited about that! Firstly, because of the WC 2010. Secondly, I am going to Spain on 25th of June! And that's absolutely blowing my mind as it's been one of my biggest dreams ever. And now it's coming true.. Ahh, that's an awesome feeling, you know. By the way, it's not the only dream that is going to become reality this summer. Mika is coming to Lithuania. BUT! Not to Vilnius or Kaunas, but to Klaipeda! My little beautiful Klaipeda! You can't imagine how amazing that is, having in mind that me and my best friend were dreaming about his concert for 3 years. I'm happy happy happy! :)
Oh, today, as every weekend ( I know it's Monday, but it felt like a Sunday to me ), I baked. Made beautiful peanut butter cookies. (Found the recipe here -> http://veganduckling.blogspot.com/2008/10/veganmofo-also-huge-peanut-butter.html ). I loved them. In fact, I love cooking, I could spend the whole day in my kitchen, with my music on. 'Cause nothing can be better than that feeling you get while waiting for your masterpiece (let me call it like that lol ) to be ready. Not to mention that amazing smell which fills your kitchen and home, while cookies or pies are in oven. And of course, it warms your heart when you see how much others love your bakings. After I made those cookies, I went for a walk with my dog. My best friend always goes with us, so I took some cookies, made green tea and poured it into my thermos mug and went outside. She loved it. :) Me too. We had a nice walk, with hot tea and tasty cookies (what more we could ask ? ). Oh, and my dog loved those cookies as well. :D
Oh! It's getting late and I have school in the morning, so I'd better be going now. :)And I promise to blog more often from now on.
